Pear Salad with Watercress and Blue Cheese
Here is a refreshing summer salad that combines all the elements we love – sweet, salty, creamy and crunchy – all rolled into one delicious experience!
Yield: 4 servings
Vinaigrette:
1 tablespoon red wine vinegar
3 tablespoons extra-virgin olive oil
Salad:
3 pears, cored and thinly sliced lengthwise (preferably Bosc, D’Anjou, or Bartlett)
1 bunch watercress, rinsed and dried
1 cup toasted, salted walnuts
1/2 cup crumbled mild blue cheese
Freshly ground black pepper, to taste
In a small container with a tight fitting lid, combine the vinegar and olive oil, close the lid
tightly, and shake well to combine. Or, whisk to combine the ingredients in a small bowl.
In a large bowl, drizzle the pear slices with half the vinaigrette, season to taste with
pepper, and gently fold the slices to coat evenly.
Divide the pears evenly among four plates, topping with equal portions of the watercress,
walnuts and blue cheese. Drizzle over the remaining dressing to taste and serve.

there is one more thing is going to be added to olive oil and red wine. what is that element?

Thought there was a shallot diced in the dressing; and NO pepper!
Are all the other recipes correct?
Shallots too in the dressing.
And kosher salt to taste for the salad
