Yield: 2 to 4 servings
½ cantaloupe, seeded, rind removed, and sliced into 1-inch sections
2 pints strawberries, hulled and quartered
2 tablespoons of balsamic
15 medium-sized fresh mint leaves, chopped finely
Freshly ground black pepper, to taste
1 cup crumbled feta cheese
2 tablespoons extra-virgin olive oil
You are really going to love this quick and easy recipe, celebrating the flavors of summer in a fresh fruit salad:
Gently toss the cantaloupe, strawberries, vinegar, pepper, and olive oil in a large bowl.
Add the feta and chopped mint to the bowl just prior to serving and toss.

Love the simplicity of this. I live alone as kids grown out of home but trying to better my intake if healthy foods which is hard for me. But when I eat, I eat very small portions throughout the day. Thanks to PBS for airing awareness of healthy eating/living.
